Easy homemade lasagna (thanks to Honig)


So my dear friend Melissa wanted to know how I make lasagna.
Here you go Meli!

The ingredients:


Minced meat, precut veggies, some Gouda cheese, lasagna sauce and the lasagnapasta


Fry the minced meat till brown and add the vegetables


Continue to stirr and I always season the meat extra with some Italian spices (not too much)

Follow the direction of the package to make the lasagnasauce (800 ml water with the lasgnapowder)
Pur it in the pan and stir


In a lasagnapirexdish (is that even a word?) put some of the meat/sauce/vegetable at the bottom. Than put the lasagnapasta on it. I made 3 layers.



Finish with the sauce and sprinkle Gouda cheese on the top. Ready for the oven


The lasagna is ready after 30 min

Natasha's fried rice special (nasi)


The boyfriend wanted to eat my special fried rice for dinner.
My fired rice never taste the same because it depends what kind of leftover meat I have in the freezer. But here are the basics.

You need

starting the nasi

Rice (cooked and cooled)
Leftover meat/chicken/prawns
Vegetables (onions, bell peppers, carrots,tau-ge any veggie you like)
Omelet strips (just bake 3 omelets and cut them in strips)
Nasi spices (conimex or other brand)


Put oil in a large pan and start frying the veggies with the nasi spices


Add the leftover meat/chicken/prawns

Add half of the cooked rice

Stir and add the cooked prawns, the other half of cooked rice and the omelet strips.
stir again and add some sweet soya sauce

I serve my fried rice with homemade peanut sauce and prawn crackers (peanut sauce on this pic are not homemade, was to lazy)

Nigella's chicken fajita's with my own twist

I love love love watching Nigella's cookingshows (thank you BBC2) But I am a BAD fan because I only have 1 recipe book of her, I wish I had all her recipe books.
Anyways so last week I missed Nigella's Kitchen, I was very sad because I didn't knew that she started a new show. I saw that she was TT on twitter and that is how I found out that she started Nigella's Kitchen.

Yesterday she made Chicken fajita's and I L O V E fajita's! They looked good and so easy to make.

Dinner tonight at mi casa was Chicken fajita's!

Marinated chicken ( use any herbs and spices that you like with some oystersause and let marinate for 2 hours or more)
Paprika/bell peppers
Onions
Corn
sof tortilla
Sour cream with crushed garlic (not on the pic)
Cheese (not on the pic)

I love using my grill skillet to make fajita's.

In a super hot skillet put the sliced bell peppers and onions
paprika and onions

After they are done put the onions and bell peppers aside

Grill the chicken

Put the chicken,bell peppers, onions and corn together and stirr. Taste and put salt/pepper if you like
mix


Warm up the soft tortilla, put some sour cream and cheese on the tortilla. Put the chicken-onion-bell pepper-corn on top
time to roll up

Roll up and eat!

(Blueband) Peanut Butter cookies


Soooooooo it's been a while since I posted a recipe!

Today I made this super easy peanut butter cookies. You have to make too double the recipe because they are delicious!!!!
1 batch make like 20 to 25 big ones like I did.
 


ingredients for the peanut butter cookies

Recipe (for 1 batch)
113 gr margarine
113 gr peanut butter
85 gr brown sugar
170 gr flour
113 gr granulated sugar
1 egg
1/2 teaspoon bicarbonate of soda
1/2 teaspoon vanilla essence
pich of salt

Instructions
1. Cream margarine, sugar and peanut butter together

2. Beat well, add the egg and vanilla essence and beat again.

3. Stir in flour sifted with the bicarbonate of soda and salt (I left the salt out in my recipe bc the margarine already has salt in it)
3. put flour an d bicard soda

4. Drop by spoonfuls on to a greased baking sheet.

5. Press lightly with a floured spoon and bake at 350 F (my European stove: 200 degree cel) for approx 8 to 10 min
5. press with a spoon, I put Smarties on the cookies

6. Take the cookies off the baking sheet with a spatula and cool on a cake rack
the cookies are ready to eat!

They are a bit sift when you take them out. They will get hard after they are cooled.

Store them in a cookie jar (or 2 like I did!!)

They are very easy to make and taste very very very nice. Give it a try!

Banana hazelnut cake

Wednesday 24th of march was my B-day!
And I had a little celebration of it yesterday with my father in law his girlfriend and some friends. I made a  delicious banana hazelnut cake. It was soft on the inside mmmmmm.
I think it will come at it best if the cake was lukewarm with two vanilla ice-cream scopes  mjamie!

Dimpled Sugar cake


After reading a blog ( http://creampuffsinvenice.ca/2007/11/) on the internet about the Dimpled Sugar Cake from Carole Walter I decided to try it too.

In her book she explains to dimple the dough with your finger tops.  I used the back of a wooden spoon to make the dimples (I dusted the end of the spoon with a little bit of flour before dimpling)

The taste was  delicious but not WAUW. I would make this cake again but with a few adaptations.

Chocolate Chunk Vanilla Muffins from Carole Walter


A while ago I purchased the "Great Coffee Cakes, Sticky Buns, Muffins & More book " from Carole Walter on Amazon.com. I decided to buy this book after reading the blog of  Bakeorbreak --> http://www.bakeorbreak.com/2008/09/23/sour-cream-coffee-cake-with-chocolate-and-nuts/#more-287

Finely I had some spare time this morning and I made the chocolate chunk muffin from the book.
The muffins turned out GREAT! No too sweet and the chocolate chunk in the muffin was chunkie and guwie.

My boyfriend liked it a lot and so did Miguel.

He has arrived!


On the 27th of december we welcomed our second son Rafael Sebastiano in our lives. After 4 (painful) hours in labor he was born!
I'm now very busy with two kids. As soon as everything is settled i will post some new entry's on this blog.

Dutch speculaas/pepernoten


It's been a while!
I'm due in 4 weeks and most of the time I feel tired and no energy to bake something, not even diner hahahaha.

But it's St.Klaas time here in Holland! (more info:http://en.wikipedia.org/wiki/Sinterklaas)

So I decided to try to make some pepernoten. There are many recipes on the internet. Just google "recipe pepernoten" or "recipe speculaas" en you can find a recipe.

The pepernoten were good! And we ate a few with some hot coco.

Sponge Bob cupcakes nr 2


Tomorrow is the last party (finely hahaha) of my son. I made a simple vanilla cupcake and decorated it with yellow icing, colored puffed rice and some candles.
I love the result! And the cakes taste very very good.
